COOKING WITH STAINLESS STEEL
Do I need to cook differently with stainless steel cookware?
Yes you do. The main thing is that you will need to preheat your pan before adding oil or butter. This enables the metal to expand and the pores of the steel to shrink. If you do not preheat your pan, food is likely to ‘pinch’ to the surface of the pan, and it will stick.
How do I know if my pan is hot enough?
To check if your pan has been preheated sufficiently, drop a small amount of water onto the pan. If it beads up and glides over the surface, your pan is hot enough and you can start cooking. Another tip is also to ensure your food is at room temperature before you start cooking. Big differences in temperature between your food and the pans surface will increase the chances of the food sticking.
What are the benefits of stainless steel cookware?
One of the biggest advantages of cooking with stainless steel is the ability to sear meat and vegetables on high heat and to create golden colour and that add a beautiful crisp finish.
Caramelised pieces will stick to the pan and that’s nothing to worry about. This is called ‘fond’ and it doesn’t mean you have burnt your food. You can deglaze the fond by using vinegar, citrus juice or wine to create a beautiful flavoursome sauce or jus.
Do I need to season my stainless steel pan?
No there is no need to season your pan. Food shouldn’t stick if your pans are preheated. Stainless steel is designed for immediate use. And after washing the pan with soap, you will remove any seasoned layer.
