Ingredients:
- 1 tbsp olive oil
- 1 cup broccoli florets
- 1 cup sliced carrots
- 1 cup sliced zucchini
- 1 cup vegetable or chicken broth
- 1 cup light cooking cream or milk
- 1 tbsp flour (optional, for thickening)
- Salt & pepper to taste
- Fresh herbs (parsley or thyme)
Method:
- Heat oil in your Sauté over medium heat.
- Add carrots and cook for 3 minutes, then add broccoli and zucchini.
- Pour in the broth and let simmer until vegetables begin to soften.
- Stir in the cream. If you want it thicker, whisk flour into 2 tbsp of water and add to the pan.
- Season with salt, pepper, and herbs.
- Cover and cook for another 5 minutes until creamy and tender.
- Serve with rice, pasta, or crusty bread.
