Warm & Creamy Veggie Bowl

Ingredients:

  • 1 tbsp olive oil
  • 1 cup broccoli florets
  • 1 cup sliced carrots
  • 1 cup sliced zucchini
  • 1 cup vegetable or chicken broth
  • 1 cup light cooking cream or milk
  • 1 tbsp flour (optional, for thickening)
  • Salt & pepper to taste
  • Fresh herbs (parsley or thyme) 

Method:

  1. Heat oil in your Sauté over medium heat.
  2. Add carrots and cook for 3 minutes, then add broccoli and zucchini.
  3. Pour in the broth and let simmer until vegetables begin to soften.
  4. Stir in the cream. If you want it thicker, whisk flour into 2 tbsp of water and add to the pan.
  5. Season with salt, pepper, and herbs.
  6. Cover and cook for another 5 minutes until creamy and tender.
  7. Serve with rice, pasta, or crusty bread.
