Ingredients:
- 500 g stewing beef, cut into chunks
- 1 tbsp oil
- 1 onion, sliced
- 2 carrots, chopped
- 1 cup potatoes, cubed
- 1 cup green beans or zucchini
- 3 cups beef stock
- 1 bay leaf
- Salt & pepper
- Fresh parsley for garnish
Method:
- Heat oil in the pot on medium-high. Add beef pieces and brown well.
- Add onions and cook until softened.
- Add carrots, potatoes, and any other vegetables you prefer.
- Pour in beef stock, add bay leaf, and season with salt and pepper.
- Bring to a boil, then lower to a simmer. Cover and cook for 45–60 minutes until beef is tender.
- Remove bay leaf, taste and adjust seasoning.
- Garnish with parsley and serve with mashed potatoes or crusty rolls.
