Slow-Simmered Family Beef Stew

Ingredients:

  • 500 g stewing beef, cut into chunks 
  • 1 tbsp oil
  • 1 onion, sliced
  •  2 carrots, chopped
  • 1 cup potatoes, cubed 
  • 1 cup green beans or zucchini
  • 3 cups beef stock 
  • 1 bay leaf 
  • Salt & pepper
  • Fresh parsley for garnish 

Method:

  1. Heat oil in the pot on medium-high. Add beef pieces and brown well.
  2. Add onions and cook until softened.
  3. Add carrots, potatoes, and any other vegetables you prefer.
  4. Pour in beef stock, add bay leaf, and season with salt and pepper.
  5. Bring to a boil, then lower to a simmer. Cover and cook for 45–60 minutes until beef is tender.
  6. Remove bay leaf, taste and adjust seasoning.
  7. Garnish with parsley and serve with mashed potatoes or crusty rolls.
