Fluffy Pancakes with Warm Berry Compote

Ingredients:

Pancakes

  • 1 cup all-purpose flour 
  • 2 tbsp sugar 
  • 1 tsp baking powder 
  • ½ tsp baking soda 
  • Pinch of salt 
  • ¾ cup milk 
  • 1 egg 
  • 2 tbsp melted butter or oil 
  • 1 tsp vanilla extract 

Berry Compote 

  • 1½ cups mixed berries (raspberries, blueberries, strawberries)
  • 2 tbsp maple syrup or sugar
  • 1 tbsp lemon juice
  • 2 tbsp water 

Method:

  1. Mix all dry pancake ingredients in a bowl.
  2. Whisk wet ingredients separately, then gently combine with dry ingredients.
  3. Heat a RACO SmartStart frypan over medium heat. Pour batter to form pancakes and cook 2 minutes per side until golden.
  4. In a small RACO SmartStart frypan, heat berries, syrup, lemon juice, and water for 5–7 minutes until saucy.
  5. Serve pancakes topped with warm berry compote and extra syrup.
