Ingredients:
Pancakes
- 1 cup all-purpose flour
- 2 tbsp sugar
- 1 tsp baking powder
- ½ tsp baking soda
- Pinch of salt
- ¾ cup milk
- 1 egg
- 2 tbsp melted butter or oil
- 1 tsp vanilla extract
Berry Compote

1½ cups mixed berries (raspberries, blueberries, strawberries)

2 tbsp maple syrup or sugar

1 tbsp lemon juice
- 2 tbsp water
Method:
- Mix all dry pancake ingredients in a bowl.
- Whisk wet ingredients separately, then gently combine with dry ingredients.
- Heat a RACO SmartStart frypan over medium heat. Pour batter to form pancakes and cook 2 minutes per side until golden.
- In a small RACO SmartStart frypan, heat berries, syrup, lemon juice, and water for 5–7 minutes until saucy.
- Serve pancakes topped with warm berry compote and extra syrup.
