Rice Bubble Monsters

  • 4 cups rice bubbles
  • 1 cup desiccated coconut
  • 100 grams butter
  • 200 grams marshmallows
  • Food colouring
  • Sprinkles
  • Monster eyes


  1. Melt the butter and marshmallows together on the stove over
    medium heat. Use a RACO Contemporary saucepan for best results.
  2. Combine the coconut and rice bubbles in a large bowl.
  3. Add food colouring to the marshmallow mix to colour.
  4. Pour the marshmallow mixture into the rice bubbles and mix well.
  5. Fill a muffin pan with the sticky rice bubble mixture.
  6. Top with sprinkles and add monster eyes.
  7. Refrigerate for 3 hours or until solid, then using the edge
    of a silicone spatula release them from the muffin pan and serve.
