Mini Banana Bread

  • 120g softened butter
  • 200g brown sugar
  • 4 bananas mashed (preferably ripe)
  • 2 eggs
  • 1 1/2 cups plain flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon vanilla extract


  1. Preheat oven to 160C degrees fan-forced (or 170C non fan-forced).
  2. Place the softened butter and brown sugar into a bowl. Mix until it looks pale and fluffy.
  3. Add the mashed banana and the eggs to the butter mixture. Mix until well combined.
  4. Add the plain flour and baking soda to the bowl.
  5. Add the salt and vanilla extract and mix.
  6. Pour the mixture into the RACO Aerolift 6 Cup Mini Loaf Pan.
  7. Cook for 1 hour.

Tip: You can check if it’s ready by inserting a skewer into the middle of the mini banana bread and it comes out clean.

For best results, use the RACO Aerolift 6 Cup Mini Loaf Pan.
