Berry Friand Muffins

The perfect little snack for your afternoon break. These berry friand muffins are seriously delicious! They are so soft but so dense at the same time. It's literally like a little piece of heaven, every single bite! These are the always a crowd pleaser at every function. The problem is, how do you stop at one?

Ingredients:

  • 10 egg whites
  • 1 cup plain flour
  • 3 cups icing sugar
  • 3 cups almond meal
  • 400g butter melted
  • 1 cup berries (frozen work well)
  • Zest of 1 lime

Method:

  1. Pre heat your oven to 150C-160C degrees fan forced
  2. In a large mixing bowl, shift flour and icing sugar.
  3. Add in the zest of 1 lime and the almond meal.
  4. Gently beat your egg whites with a fork.
  5. Add the beaten egg whites and butter to the flour mixture and mix until well combined.
  6. Add in frozen berries, and fold in gently. Try not to break and mix to much as your berries will burst and break.
  7. Fill your RACO Aerolift 12 Cup Deep Muffin Pan. You want to fill it around three quarters full.
  8. Bake in the oven for 40 minutes.
  9. Place on a wire rack to cool. And dust the top with icing sugar.
