Vanilla Cake and Cupcakes

Vanilla cake


  • 1 and 1/3 cup plain flour (we use gluten free plain flour)
  • 1 and 1/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter
  • 1 cup sugar
  • 2 eggs
  • 2 teaspoon vanilla extract
  • 1/2 cup sour cream

Vanilla frosting


  • 1 cup unsalted butter
  • 3 cups icing sugar
  • 2 teaspoons vanilla extract
  • 2 tablespoons heavy cream



  1. Preheat oven 180°C. Line RACO Aerolift Muffin Pan with cupcake liners or prepare cake pan
  2. In a large bowl whisk together flour, baking powder and salt. Set aside
  3. In another bowl beat butter and sugar until light and fluffy. Beat in eggs one at a time. Add vanilla and mix. Add the sour cream and mix until combined.
  4. Slowly add the flour to the mix and stir until just combined.
  5. Scoop batter into lined cupcake tray or into prepared cake pan.
  6. Cook cupcakes for 15 mins or cake will take about 20 - 25 mins.

For best results, use RACO bakeware.
