Toasted Coconut and Banana Bread

  • 120 grams of butter
  • 1/2 cup of caster sugar
  • 1/2 cup off brown sugar
  • 2 eggs
  • 1 teaspoon vanilla essence
  • 1 1/2 cups of plain flour
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1 1/2 teaspoons of freshly grated nutmeg
  • 1/2 cup toasted walnuts
  • 1/2 cup toasted coconut
  • 1/2 cup of sour cream
  • 3 x ripe bananas


  1. Butter loaf pan & preheat oven to 180°C.
  2. Place coconut and chopped walnuts on a baking tray. Toast in oven till golden and fragrant.
  3. Whisk softened butter and sugar in a bowl. Add the eggs one at a time, then the vanilla.
  4. Mix in flour, baking soda and salt.
  5. Once combined add in the nutmeg, walnuts and toasted coconut.
  6. Gently fold in the bananas and sour cream.
  7. Pour in to the loaf pan, banging out any bubbles.
  8. Cook for 1 hour, the top should be golden brown.

Tip: Serve lukewarm and add a slathering of butter to wash away the days stresses!

For best results, use RACO bakeware.
