Balsamic & Oregano Roasted Onion

  • 1kg Red onions, rough peel removed, halved and/or quartered
  • 25g Oregano, leaves only
  • 75g Aged balsamic
  • 50g EVOO, additional if desired
  • Black pepper, ground to taste
  • Salt, to taste


  1. Preheat fan-forced oven to 200 degrees celsius.
  2. Toss all ingredients in large baking tray and roast for 20-30 minutes or until caramelised, starting to collapse and onion layers separating.
  3. Dress with additional fresh vinegar and EVOO if desired
