Angel Hair Birds' Nests

These angel hair birds' nests are such a great breakfast, brunch or even lunch idea! They are so simple to make, and so tasty. The beautiful crispy edges of the pasta, and that gooey centre of the egg are a match made in heaven. This is a winner for everyone in the house.

Ingredients:

  • 250 grams angel hair pasta
  • 1 cup Parmesan cheese
  • 1 cup mozzarella
  • 200ml crushed tomatoes/passata
  • 2 spring onions finely sliced
  • 6 eggs

Method:

  1. Pre-heat your oven to 180 degrees.
  2. Fill your RACO Reliance 28cm/5.7L Chef's Casserole with water. On a high heat, bring water to a boil, and cook pasta according to packet instructions. Drain and set aside.
  3. In a large mixing bowl, add in cooked pasta, Parmesan cheese, mozzarella cheese, spring onion and passata. Mix well and season well with salt and pepper.
  4. Fill your RACO Aerolift 6 Cup Jumbo Muffin Pan with the pasta filling. You want to fill it to the top and make a well in the middle of the pasta.
  5. In the well, crack in your egg. Season with salt and pepper and into the oven for about 20-25 minutes, or until the egg has cooked and the pasta has got beautiful crisp edges.
  6. Once cooked, let them rest for 5 minutes before serving.

For best results, use RACO cookware and bakeware.
